You won’t want to miss this Ham Split Pea Soup!
By: Deborah Waddell
Cook Time: 20-30 minutes
Yield: 4-6 servings
Ingredients:
- 1 (16 oz) bag of split peas
- 1/2 medium onion chopped
- 2 stalks of celery
- 2 potatoes, peeled and chopped
- 2 large carrots sliced
- 2 bay leaves
- 8 cups of water
- 1.5 Tbsp of herb mare or to taste
- 6 cloves of garlic
- 1 tsp dried basil
- 2 Tbsp parsley
- 0.5 Tbsp cumin
- 1 tsp smoked paprika
Directions :
- Place all the ingredients into a large pot and bring to a boil. Skim off any foam that forms while boiling.
- Cover and simmer for 20 – 30 minutes or until peas and vegetables are tender.
- Place 3 – 5 cups of the soup into a blender and puree until creamy.
- Replace the pureed soup into the pot and add seasonings if necessary.
Instant Pot: Place all ingredients into the IP and cook on Manual for 9 minutes with Natural Release (NR). When done, remove the lid and press Cancel. Let the soup cool and thicken up a bit before eating.
Notes: This is a quick and easy soup for those nights when you are in a rush for a quick and nourishing meal. I use about 5 cups of the soup to puree because I love my soup thick and creamy.
