
Your body is meant to be healthy; it shouldn’t need drugs or surgery except in times of emergency. Why, then, have we become so dependent on these interventions? The answer is this: all too often, it’s the food we eat that is making us sick. From the perspective of human evolution, the current diet we eat is a bizarre anomaly, unlike anything we have eaten over the last four million years. Our blood, arteries, and cells are not designed to function properly under excessive amounts of fat and cholesterol. Our intestines are not designed to function in the absence of fiber. Our immune system is not designed to function optimally without an abundance of plant-based nutrients and phytochemicals. With our cells drowning in fat, cholesterol, animal proteins, and artificial chemicals, and our immune system deprived of what it needs to maintain itself, it’s no wonder so many of us get cancer, heart disease, high blood pressure, adult-onset diabetes, arthritis, osteoporosis, and other age-related illnesses. It is a testament to the resilience of the human body that anyone can maintain some semblance of health by eating like we do today.
Recipe of the Month
Four-Ingredient Oatmeal Belgian Waffles
Makes 4-5 waffles
3 cups of rolled oats
1 large ripe banana
1 tsp pure vanilla extract
2.5 cups filtered water
Place all ingredients into a high-speed blender and blend until smooth. It should be a thick batter consistency.
Pour the batter into your heated waffle maker and cook for about 10 minutes.
I top my waffles with fresh berries that I cook down to make a syrup. If you have fruit that needs to be eaten rather than thrown out, then cook it down to a soft liquid, and you can use it as a syrup. You could also use this batter for pancakes if you don’t have a waffle iron.
This recipe is a great way to incorporate oats, especially if you aren’t a fan of oatmeal. This is how I get my husband to eat oats!
